INGREDIENTS

Donuts

  • 125 ml (½ cup) lukewarm water
  • 20 ml (4 tsp.) Instant yeast
  • 250 ml (1 cup) 35% cream
  • 1 clementine, grated zest only (or ½ orange)
  • 1 lemon, grated zest only
  • 5 ml (1 teaspoon) of vanilla extract
  • 615 g (4 ½ cups) unbleached all-purpose flour
  • 105 g (½ cup) sugar
  • 5 ml (1 tsp.) Salt
  • 4 egg yolks
  • 3 eggs
  • Corn or vegetable oil, for frying
  • Sugar, to coat

Custard

  • 210 g (1 cup) sugar
  • 45 g (1/3 cup) unbleached all-purpose flour
  • 30 ml (2 tbsp.) Cornstarch
  • 6 egg yolks
  • 2 eggs
  • 1 liter (4 cups) hot milk
  • 10 ml (2 tsp.) Vanilla extract
