- 20 ml (4 tsp.) Instant yeast
- 250 ml (1 cup) 35% cream
- 1 clementine, grated zest only (or ½ orange)
- 1 lemon, grated zest only
- 5 ml (1 teaspoon) of vanilla extract
- 615 g (4 ½ cups) unbleached all-purpose flour
- 105 g (½ cup) sugar
- 5 ml (1 tsp.) Salt
- 4 egg yolks
- 3 eggs
- Corn or vegetable oil, for frying
- Sugar, to coat
Custard
- 210 g (1 cup) sugar
- 45 g (1/3 cup) unbleached all-purpose flour
- 30 ml (2 tbsp.) Cornstarch
- 6 egg yolks
- 2 eggs
- 1 liter (4 cups) hot milk
- 10 ml (2 tsp.) Vanilla extract
