Pork Chops with Balsamic Glaze
Ingredients
4 oz pork chop
2 tbsp olive oil
3 shallot
1⁄4 cup balsamic vinegar
1⁄2 tsp sugar

Pat pork chops dry and sprinkle with salt and pepper. Heat oil in a heavy pan over medium-high heat until hot but not yet smoking. Cook pork, in batches if necessary, with shallots, turning pork over once and stirring shallots occasionally, until pork is browned and shallots are golden brown and tender, about 5 minutes.
Transfer pork with tongs to a plate and add vinegar and sugar to shallots in pan. Stir while cooking until sugar is dissolved and liquid is thickened slightly, about 1 minute. Add salt and pepper to taste. Reduce heat to medium and return pork to pan. Turn a few times to coat pork in sauce. Cook chops, turning over once, until just cooked through, about 3 minutes.
Transfer pork chops to a platter and boil sauce until thickened and syrupy. Pour sauce over pork and serve immediately.
